Aldi UK are the official sponsors of Team GB at the Rio Olympics. They invited us to try out one of their new recipes created by a Team GB nutritionist. The recipe is healthy, tasty and a fun one to make with kids in the school holidays!

Instead of a blog post I thought another venture into Vlogging was in order (sorry!). Finley, myself and Auntie Amy (my sister) chose to make Coconut and Blueberry Pancakes…

*this post was sponsored by Aldi but all opinions expressed are Finley’s own*

Ingredients

For the pancake: 1 egg / 1 large banana / 3 tablespoons of Milled Linseed (we used plain flour) / 3 tablespoons of water

1 teaspoon of Coconut Oil for frying

For the topping: plain greek yoghurt / blueberries / honey / desiccated coconut

Method

If using linseed combine with the water and allow to sit in the fridge for 30 minutes.

Mash the banana in a bowl and add the linseed/flour. Add the egg and two tablespoons of coconut and whisk the mixture so its nice and thick.

Heat the coconut oil over a medium heat. Once melted spoon 1/6 of the mixture into the pan. Heat until bubbles form and then flip the pancake and cook for a further minute or two.

Top the pancakes with a spoonful of yoghurt, a few blueberries and a drizzle of honey.

I am a massive Aldi convert. If you have time to actually go shopping rather than get it delivered, you can save LOADS of money! I save around £25 a week on the same shop compared to Sainos online! #stayclassymama

I love Aldi, never seem to spend more than £47 a week, which is amazing! Unless of course you get tempted by the home/gardening/children’s/odds and sods bit in the middle!
I shall watch your vlog after work as your last one made me chuckle out loud – I will look like a psychotic maniac in the office! #stayclassymama

I don’t shop at Aldi but I do keep meaning to! My friends nag me about it all the time how amazing it is but the one time I went there I couldn’t find anything that I wanted and had to go to Tesco straight after! I love that your son is such a good help, he is so adorable! #stayclassymama

This looks great! And so quick and easy. They’re building a new Aldi near me. I’ve not been shopping there in years and remember being surprised at seeing bags of cement in one of the aisles! I do hear lots of good things about them though. I love the bunting and the ‘apron’ too! #stayclassymama

Omg that looked so stressful! I’m a nightmare when the kids cook and they are teenagers! I hate the mess and this adorable vlog reminded me how stressed I used to get when I cooked with mine years ago. You and your sister, on the other hand, come across as wonderfully calm and relaxed helpers to your gorgeous son! Lovely. Alison x #StayClassyMama

I love how he’s getting into everything – I was the same way when I helped my mum bake when I was a kid. The Popple would love these pancakes, but I HATE bananas so she’s not getting them unless her father is willing to have a go. #stayclassymama

Aaaah my eldest and husband have a sunday morning pancake ritual so I might send this his way – he would create even more mess than me but if I don’t look directly at it, it’s fine 😉 #stayclassymama
